Ingredientes

  • 3 large, diced carrots
  • 2 medium, diced parsnips
  • 2, sliced leeks
  • 2 large, cubed potatoes
  • 3 stalks, chopped celery
  • 1 large, diced onion
  • 3 cloves, minced garlic
  • 2 liters vegetable broth
  • 2 sprigs thyme
  • 2 bay leaves
  • 2 tablespoons olive oil
  • to taste salt
  • to taste black pepper

Método de Preparação

  1. Heat olive oil in a large pot over medium heat
  2. Sauté onions, celery, and garlic until softened
  3. Add carrots, parsnips, leeks, and potatoes
  4. Pour in vegetable broth
  5. Add thyme and bay leaves
  6. Bring to boil, then reduce heat and simmer for 40 minutes
  7. Season with salt and pepper
  8. Remove bay leaves and thyme sprigs before serving
  1. Add onion, celery, and garlic to bowl: 5 sec/speed 5
  2. Add oil: 3 min/120°C/speed 1
  3. Add remaining vegetables, broth, and herbs
  4. Cook: 30 min/100°C/speed 1
  5. Season to taste

Dicas

  1. Cut vegetables in similar sizes for even cooking
  2. Can be frozen for up to 3 months
  3. Add cream for a richer version
  4. Use fresh herbs when possible
  5. Can be blended for a smoother consistency
