Ingredientes

  • 1 kg ripe tomatoes
  • 1 medium cucumber
  • 1 large red bell pepper
  • 2 garlic cloves
  • 100g day-old white bread bread
  • 60ml olive oil
  • 30ml sherry vinegar
  • to taste salt
  • to taste black pepper
  • 120ml ice water

Método de Preparação

  1. Roughly chop tomatoes, cucumber, and pepper
  2. Soak bread in water for 5 minutes, then squeeze out excess
  3. Blend vegetables, garlic, and bread until smooth
  4. Add olive oil and vinegar while blending
  5. Season with salt and pepper
  6. Add ice water to achieve desired consistency
  7. Chill for at least 2 hours before serving

  2. Add vegetables and garlic, 20 sec/speed 5
  3. Add oil and vinegar through hole, 2 min/speed 10
  4. Add ice water, 30 sec/speed 5
  5. Season to taste

Dicas

  1. Use the ripest tomatoes possible for best flavor
  2. Serve with small diced vegetables as garnish
  3. Can be stored in refrigerator for up to 2 days
  4. Add more ice water if too thick
  5. For extra smoothness, strain through a fine-mesh sieve
