Ingredientes

  • 1 kg ripe tomatoes
  • 1 medium cucumber
  • 1 large red bell pepper
  • 2 garlic cloves
  • 100g day-old bread
  • 60ml olive oil
  • 30ml sherry vinegar
  • to taste salt
  • to taste black pepper
  • 120ml ice water

Método de Preparação

  1. Roughly chop all vegetables
  2. Soak bread in water for 5 minutes
  3. Blend tomatoes, cucumber, pepper, and garlic until smooth
  4. Add soaked bread, olive oil, vinegar
  5. Season with salt and pepper
  6. Add ice water to achieve desired consistency
  7. Chill for at least 2 hours
  8. Serve cold with garnishes
  1. Add vegetables to bowl, chop 5 sec/speed 5
  2. Add soaked bread, oil, vinegar, seasonings
  3. Blend 2 min/speed 10
  4. Add ice water through hole while running 30 sec/speed 4
  5. Chill before serving

Dicas

  1. Use the ripest summer tomatoes possible
  2. Serve with small diced vegetables as garnish
  3. Can be made 1 day ahead
  4. Adjust thickness with water as needed
  5. Best served very cold
